Proper Fish followed in 2019, and with it came a singular focus: to make the best fish and chips in Washington State. The restaurant became a regional institution, winning awards for its sustainable sourcing and its uncompromising approach to a dish that most people had given up on.
Batter Up is the next chapter. A proper fish shop with swagger, a British chippy that collided with a Pacific Northwest neighborhood spot and accidentally became the coolest place in town. Not polished. Not corporate. Just alive.
